What's Up Wednesday

 Hello there! Long time no chat! Life has been crazy busy around here these days and this little blog has been neglected. Let's catch up, shall we?

What We're Eating This Week: I recently had a friend ask if we were still eating plant-based, and I told her we are about 80% plant-based, 20% standard diet. We definitely feel better when eating plant-based, but we started to get into a rut where we felt like we were eating the same recipes all the time... and the kids started giving us a hard time about "not this again". We have started mixing it back up with "regular" recipes too. 

This week we are having a "make your own mini pizza" night, a spaghetti night (with some spaghetti squash snuck in there too), veggie fajita night, and Shay's mushroom, sausage and kale pasta. The kids LOVE this pasta!

What I'm Reminiscing About: We had the most beautiful weather last Friday and I took the kids to ride bikes/scooters and play by the creek after school. 


It had me thinking about how much fun we had over the summer just playing in the creek for hours. 

Winter is not my favorite season... bring on the warmer temps of spring!

What We've Been Up To: Extracurricular activities! Our sweet girl started a ballet/tap dance class and is in heaven.

Liam started swim lessons and is loving those too (I swear I've taken pictures but cannot for the life of me find them!).

What I'm Excited About: We have a big Spring Break trip planned this year and I am very much looking forward to it... Italy! 

We will spend a little time in Florence, Siena, Cinque Terre and then Rome. The kids did so well on our trip to Ireland that I am not at all nervous about this trip... just plain excited!

What I'm Watching/Reading: I am currently reading The German Wife and am hooked! I've loved Kelly Rimmer's other books, so this one was a no-brainer for me. 

What I'm Listening To: I've been following along with Tara-Leigh Cobble and the Bible Recap, but I've also been doing the Bible in a Year with Fr. Mike Schmitz and I really like them both-- maybe Fr. Mike's a little better? I love how they can read the same passages of scripture and interpret them similarly, yet get different things out of them. They aren't on the exact same passages at the same time, but are in similar places of the Bible. For example, Tara-Leigh started in Genesis, then fast forwarded to Job, then came back to Genesis. Fr. Mike stayed in Genesis, then started adding in Job. But you could just read in the notes on each episode to pick which passage you want to follow along with. 

I listen to Tara-Leigh in the morning, and then Fr. Mike's at night while I'm cleaning up the kitchen/packing lunches/getting ready for the following day. For the Bible Recap, you read the Bible on your own and then she discusses it, but for the Bible in a Year he reads the scripture to you, then discusses it. So technically the Bible in a Year ones are longer, but that's because he is reading the scripture to you. Anyway, I've really liked both a lot and recommend them both. 

What I'm Wearing: 

Leggings (my color is out of stock, but they have other good options)/ White Sweater/Black Flats

Jeans/Sweater/Wedges (old but similar here)

What I'm Doing This Weekend: I am planning to do a little shopping/hanging out/grabbing lunch with some girlfriends on Saturday, but that's about it! 

What Else is New: We were at Dollar Tree the other day and they had a bunch of fairy garden supplies. We put a little fairy garden in the backyard (all for less than $15) and the kids have been loving it! I knew LG would be a big fan, but I've been surprised by how much Liam likes it too. 

1,000 Hours Outside: Winter is not our best season for getting outside. We are very hit or miss this time of year-- we go 2-3 days with very little outside time, and then we will get a pretty day and spend a few hours outside trying to make up for lost time. We are averaging 1.5 hours per day right now, bringing our grand total to 590 hours since we started in June.

  2. I wanted to do Florence this spring, we could have been there at the same time! But I was deterred by the flight prices so we turned our efforts to Disney in the fall. This is perfect though, I'll just copy your itinerary when we do get around to make the trip!

  3. Your Italy trip sounds wonderful! I am impressed with your progress on 1000 hours outside. I am trying to get 23 minutes a day and struggling with all the cold, rain we’ve been having. The fairy garden is so fun. I bet the kids are loving it! ~Sarah @ Sunshine & Books

  4. Italy sounds so incredible! I can't wait to follow along. We went to Venice, Florence and Rome in 2014 as our last trip before we left the UK. Just love Italy and hope to return someday! I just went to Dollar Tree to buy Valentine's Day cards, and I have to say your store looks so much nicer than mine! Thanks for the tip on the other Bible podcast. I'm going to check it out just to get some variety!

  7. we started our 1000 hours outside in june too and are at about 490. we need to step it up but cold weather isn't our friend. so excited to follow allong while your in italy

  8. We could have been in Florence together this spring, which is something I really wanted to do! However, the flight costs scared me away, so we focused on Disney in the fall.
