Tomato Avocado Corn Salad with Bacon

Good morning friends! Today I was in the mood for a Caprese Salad, but with a twist. I looked in the fridge and grabbed everything that sounded good. This is one of those "everything but the kitchen sink" recipes, but it worked out well! The hardest part of this is just getting your ingredients prepped and ready. Once you have everything in order, it takes less than a minute to pull it all together.

Rainy Day Quarantine Activity: Our Virtual "Trip" to Disney World

Good morning friends! Today I wanted to share a super simple yet fun activity we pulled out of our back pockets this week when it poured rain for 4 days in a row. Yes, 4 days in a row! With a baby and a toddler stuck inside on week 452 of quarantine-- yuck! Needless to say, we were starting to get desperate for some new indoor activities. 

Luckily Devin had somehow stumbled across this "Virtual Disney World" Youtube page. We checked it out and it was all the rides at Disney World, but virtually (just like the name says šŸ˜‰). We knew our Disney World loving toddler would LOVE it! Remember when we went back in December? She is still talking about our trip (so much for the people who said "she won't remember it at that age"!!).

Good morning friends! Thank you for being patient with me and my lack of a post on Monday. This is my last week of school and I had a bit more to prepare than I anticipated. We normally wouldn't be ending the year until the first week of June, but due to COVID we are ending a little early. But now I have my stuff together, and I am back!

Let's Look: Hiking Through the "Enchanted Forest"

Good morning friends! Today's link up for Let's Look is "Our Weekend"... and much like you, our weekends look a lot like our weekdays around here! We didn't do anything remarkable over the weekend, we mostly just relaxed at home and it was wonderful but not the most "photograph worthy" weekend. I do however have some pictures from one of our favorite current activities: our hikes! 

In order to keep busy and get some fresh air, we have been going on some hikes through various nature trails. Our sweet 3 year old girl is in full-on princess mode and adorably refers to the woods as an "enchanted forest". It doesn't matter where we are, every single time she sees a wooded area it's "enchanted". Her imagination is one of my favorite things lately and I love getting to see life through her eyes. Monthly Goals- May

Hello hello, happy Monday! I was talking to a girlfriend last week and we were both saying how this quarantine feels like it has been dragging on, yet somehow we've already been doing this for 8 weeks. Isn't that crazy?? That is an absurd amount of time to be locked up in your house. 

I'm not sure about where you live, but in NC we are beginning Phase 1 of opening back up. Opening up is being split into 3 phases. Phase 1 begins this week and if it goes well for 2-3 weeks, we can begin phase 2 (restaurants and bars can open but with extra precaution taken, public playgrounds can open, churches can have small gatherings, etc.). Once phase 2 goes well for 2-3 weeks, then we begin phase 3 (more things open, but with precaution taken). It seems like a lot, but I feel hopeful having a concrete plan in place.

Anyway, a new month has begun and it is time to set some goals for the month!
I love May. Normally it is a crazy busy, hectic-to-the-point-of-stressful time of year at school. It is always one of the most fun months, but life can get a little hairy due to all the extra activities. This May I am hoping to enjoy all the good parts of May without the stress, because luckily I have nowhere to be!
1. Move My Body OUTSIDE- Normally during the month of May I'm teaching and have to workout in the morning before work if I want to get my exercise in. This entails going to the gym since the sun isn't up yet. Now that I don't have to be at work, just reachable by email and home for the occasional Zoom, I have been able to go for walks/runs outside. Some of our local trails are opening back up for Phase 1 and I could not be more excited about it! My goal is to move my body at least 2 miles a day. It may be walking, it may be running, it may be a combination of both. My goal is to do this unplugged (no headphones) as often as possible. 
2. Read 3 Books- We set up our hammock in the backyard and I see a lot of book reading in the hammock in my future. 
3. Keep Up With Our Garden- Our vegetable garden is coming in nicely! We have tomatoes, zucchini, cucumbers, radishes, carrots, green beans, and basil planted so far. We also have my lemon tree and blueberry bush, which I love! It really only takes a few minutes each day to stay on top of it and it sure beats letting it get out of hand and then spending an hour out there pulling weeds!
Our blueberry bush has a lot of berries this year!
So really, that's it! The point is to continue to take things slowly and enjoy the extra time soaking up my family because a return to normal life is (hopefully) around the corner. I don't want to look back and think I was any busier right now than I needed to be. What about you?? What are some of your goals this month?

What I've Been Priming

Before we get started today I wanted to take a little poll. Maybe it's the fact that we've been cooped up for 8 weeks (gosh that's a long time!), or maybe it's that we haven't traveled in awhile due to Liam's birth... but I am itching to travel again! Obviously we aren't going anywhere anytime soon, but that isn't stopping me from mentally planning our next vacation. 

What I'm curious about is:
Have you also been planning your first trip once this quarantine is lifted?



I can't wait to see your answers! Now, onto what I've been Priming lately...

Gorilla Glue- Lily Grace has been doing puzzle after puzzle after puzzle lately. The pieces are starting to get worn down a bit and she accidentally broke a piece when taking one apart. We grabbed some super glue and the piece was back to being good as new!
Coffee Filters-- Since we have been home nonstop, we have been going through the coffee like CRAZY!
Cloth Mask-- When we heard the announcement from the CDC that we were supposed to be wearing cloth masks every time we go out, I called all the pharmacies/big box stores around our area to see if they had any and they were all out. I am NOT a seamstress and knew that if I wanted a mask, I needed to find one that someone else made. The one I bought is currently out of stock, but Amazon has other ones you can buy. Mine originally said it wouldn't arrive until mid-June and I ordered April 14th, but it has already arrived so don't be deterred by the estimated arrival.
Little Golden Books-- Lily Grace's birthday is next week and while she technically got a giant play set in the backyard for her birthday, we still wanted her to have something to open up on her actual birthday. I grabbed her several of these classic Little Golden Books since she loves to read!
Meal Planner Pad-- Our meal planner pad was starting to run low so I grabbed another one. We have been using this for YEARS and it is the easiest way for us to keep track of/plan ahead for what we are going to eat each week.
Isle of Paradise Tanning Drops--  I have seen these tanning drops EVERYWHERE lately and decided to finally give them a try. So far I like them! I'm still trying to figure out how many drops I need to use to get the right shade for me. Luckily I'm not going anywhere so if I mess it up, only my family will see šŸ˜‚
Isle of Paradise Tanning Water-- I also bought the body spray and like it too!
