Hello there and happy Friday! Today's post is going to be short and sweet. Hopefully it'll give you an idea of a new recipe to test out over the weekend. Since my diagnosis we have had a Meal Train to help alleviate the burden of cooking/cleaning while feeling sick. The Meal Train has been wonderful and I am very grateful to live in 2023 where Meal Trains are so organized and easy for everyone involved! Anyway, we have had some REALLY good food delivered to us and I wanted to share some of the recipes. Not everyone has shared their recipes with us, which is fine of course, but I wanted to share with you our favorite healthy meals that we did have a recipe for. Starting with breakfast:
Pinch of Yum Healthy Carrot Muffins
Our sweet friend Amy from church dropped off a bunch of muffins one Sunday morning to help with breakfasts and these were all a hit. Devin and I loved the carrot muffins above the most, while Lily Grace's favorite were these below...
Amy also made these pumpkin muffins below, which were Liam's favorite. She added chocolate chips, so we did too when we made our own batch. They are so good!
We had another family make us some of these sweet potato black bean enchiladas. Oh my word, we all went crazy for these!
So far those are the only meals we have a recipe for, but we have been spoiled rotten by the delicious food on our Meal Train. I never thought I was a bad cook beforehand, but some of these other moms on the Meal Train really know how to cook!! We've had a few Italian families make us spaghetti and meatballs or baked ziti with their own homemade sauce... I'm not exaggerating when I say it was some of the best sauce we've ever had. We have had a family from India make us a few Indian dishes (and we LOVE Indian food!). We've had a Vietnamese family make us a delicious veggie noodle stir fry.
We have been spoiled rotten! I keep saying to Devin "what are we going to do when I have to go back to cooking all the time?" I need to get more of these recipes-- hah!

ReplyDeleteI love that you are being cared for in this way! It means so much! I hope that you have an appetite and this type of food will help you to have one. My brother in law went for a deep dish pizza when he was going through treatment and swore that it really helped.
