What's Up Wednesday

 

Hello friends!! I hope you are all enjoying a taste of spring weather wherever you live. As I write this it is in the mid 60's and not a cloud in the sky here. Spring is here to stay and I could not be happier about it. The kids are playing outside for hours on end. My hydrangeas and rose bushes are starting to come back from being dormant over the winter. There is just something about spring that feels magical. I love it!

What We're Eating This Week:

 So far this week we have had Earthy Andy's Shawarma Bowls...

BBQ Pulled Jackfruit Sandwiches

 and tonight we are having Baja Style Cauliflower Tacos.

My in-laws are coming in town for a few days and my mother in-law is a fabulous cook. I am verrrrrry happy to hand over the reins to her for the rest of the week and take a couple days off from kitchen duty! 

What I'm Reminiscing About: 

My parents are currently in Siesta Key, Florida and it is reminding me that last year at this time, we were there with them! 

Gosh I love Siesta Key. I can't wait to get back there again next year (hopefully!)

What I'm Loving:


The ability to spend hours and hours outside with the kids. We've been bike/scooter riding...

Playing with "the whitewater center"...

Lily Grace's Disney Princess Barbies went on Spring Break (here they are at the pool)...

We moved the art table outside and both kids have been painting and doing play-doh. Basically just everything we can outside!

Also, the mosquitos haven't shown their ugly faces yet and I am loving not having to deal with them!

What We've Been Up To:

What I'm Dreading: 

Oddly enough I am not worried about flying to Ireland by myself with the kids. Maybe this is naive of me, but I feel pretty confident the flight itself will be fairly smooth. What I am dreading is once the plane lands. I will have two tired kids (the flight from PHL to DUB is 6 hours, not even close to a full night's sleep for them) and we will be navigating an airport I am not familiar with and going through customs. Maybe I am worried for no reason and customs in Dublin will be a breeze, but I am mentally preparing for the worst. My plan is to bring a bunch of snacks and to let the kids play on their tablets if necessary. I got this, right? (Not me over here reminding myself to inhale... exhale... inhale... exhale... 😜)

Devin leaves for Ireland Monday, and then just a little bit longer until the kids and I join him!

What I'm Watching/Reading:

Like everyone else, I watched and was fascinated by Inventing Anna. In case you haven't heard, the show based on a true story about a young 20-something Russian woman named Anna Sorokin who pretends to be a German heiress named Anna Delvey. She tricks the elite members of NYC society into believing she is an heiress who can't access her trust fund, then tricks them into giving her millions of dollars. 

Just like The Crown, I found myself Googling afterwards to find out what was real vs what was just for the show. It's hard to believe any of it was real, but it was! 

I have been on a roll with reading so far this year, and have read many really good books. Last week I posted the books I read in February and March:

There were some really great ones!

What I'm Listening To:

Do ya'll know who Vance Joy is? He is an Australian singer that kinda reminds me of Jack Johnson. Anyway, I tell our Google Home to play music and apparently she has figured out what I like because I rarely even ask for specific artists anymore, she just knows what to play. She has been playing some Vance Joy, Ben Rector, Jack Johnson, etc. Kinda creepy that Google knows me that well, but it's working out in my favor!

What I'm Wearing:

I have been substitute teaching a lot lately. I sub at 4 different schools and I swear I get called almost daily. When my parents are able to help with the kids, I try to sub as often as I can. I recently did a post about some of the outfits I've been wearing to sub. You can check it out here. Here are a couple examples:

What I'm Doing This Weekend:


Forest Hill isn't our church, but we are members at the Y and saw these posters hanging up this week. Sounds like a fun activity to do with the kids! Other than that, it is making sure we have all our ducks in a row for Ireland. Devin leaves Monday and then I'll be on my own to get everything ready for the kids and I!

What I'm Looking Forward to Next Month: 

April is going to be a wonderful month! We have our trip, then Devin's birthday to look forward to. It is going to fly by.

  1. I didn't realize your trip was coming SO quick!! I can't wait to hear/read all about it!! I can really relate on the flight/airport anxiety with kids, but I'm sure you'll be well prepared and the kids and you will rock it!

  2. We had the Shawarma bowls last night (and I just ate the leftovers for lunch)! Thanks for that jackfruit recipe. I've had a can of it in the cupboard for awhile but didn't know what to do with it.
    I'm sure the Dublin airport won't be that bad. The signage will be in English and everyone is so nice there, you'll be fine!
    I love that green dress! I need to update my work wardrobe, everything is so old.

  3. The Dublin airport shouldn't be that bad. Customs was a breeze :-) though I didn't have two children with me. Everyone we met was kind and helpful! I can't wait to read about your trip.

  4. Not quite spring here yet-- water was in the 20's yesterday! I was googling what was real and what wasn't too just like I am now with The Thing About Pam. So hard to believe these shows are based on real life stories. Your spring outfits are so cute.

  6. Oh, Ireland sounds so fun!!! You (and the kids) will do fine and it sounds like you have the right attitude about going with the flow. Yeah, it's hard to get a good night's sleep on a flight to Europe but it will be so worth it!!!

    Also, I can't wait until we can do more outside living. Right now it's been just a bit too cold. Blah.
