What's Up Wednesday

 Hello there! Happy Wednesday! Today I am linking up with Shay and Sheaffer for What's Up Wednesday. I didn't have answers for several of the questions, so this is a mini version of WUW. 😊 Let's get started:

What We're Eating: When we aren't eating meals from our Meal Train, we are doing our best to eat mostly plant-based foods. This week we are having:

- Ratatouille

- Spaghetti Squash with marinara (and spaghetti noodles mixed in too)

- Plant-Based nachos, using this cheese recipe:


The nutritionist I spoke to at the hospital said I need twice the amount of protein as usual right now, so we do add meatballs to the spaghetti squash and I eat a lot of nuts, beans, edamame, etc. to make sure I'm getting as much as I can. 

What I'm Reminiscing About: A year ago at this time we were in Ireland with the kids! I cannot believe it was only a year ago. 

I look at these pictures and both kiddos look like babies to me. It's truly incredible how much can change in such a short amount of time. I look at this picture and think "the family in that picture has no idea how much different their life will look a year from here." It really puts into perspective the importance of living in the moment and being grateful for everything you have when you have it. (For those of you who don't know, I was recently diagnosed with cancer, but am doing okay).

What I'm Loving: The warmer weather-- hallelujah!! I love that we can get outside and play! 

What I'm Excited About: Lily Grace's school does a fundraiser auction each year and we bid on the "Be the Teacher for the Day" experience and won. Lily Grace is VERY excited to be "Mrs. Darrell" for the day and has already told me she's going to "give the class extra recess and lots of candy" hahaha. I'm sure her "students" would love that too. We'll see about the candy. 😉

What I'm Watching/Reading: I should maybe be embarrassed that I love this, but I have no shame:


One of my best girlfriends, Hannah, and I are often talking about moving away from the city and living a slower-paced life. I always come back to "I would like that for like a week and then be ready to come back to the city" haha! Anyone else? Anyway, this show is fun to watch. It's like a farm version of the Bachelor. 

I need to do a book post soon! I haven't done one in months and have read several good ones. Here's the most recent one I read that I loved:

I think I have read all of Kristin Hannah's other books and have loved them all. Winter Garden did not disappoint. Historical fiction is my favorite genre, and I always love learning about a new time/place/experience. This book followed a character through the siege of Leningrad during WW2, and while I'm no stranger to WW2 historical fiction, the Leningrad siege was new-ish to me. 

What I'm Listening To: I've left Tara-Leigh Cobble and am only listening to this Bible in a Year podcast now:

I like how he reads the scripture to you, so I listen while I fold laundry or do some light cleaning around the house. 

What I'm Wearing: If I'm being honest, nothing new or nothing fancy. I am living in leggings and graphic tees these days. 

What Else I'm Looking Forward To: In a week and a half I get my big PET scan that tells whether or not my chemotherapy is killing the cancer cells. This is a big milestone, and I am very much looking forward to reading those results of "cancer shrinking". I feel confident that that's exactly what those results will say. 😀

1000 Hours Outside Update: We are getting close to wrapping up our year of attempting to spend 1,000 hours outside! I am happy to report that we are currently at 921 hours and counting with two months to go. With these two upcoming months being spring, I feel very confident that we can get our last 79 hours in. This has been such a wonderful experience for our family and I know we will continue to do this moving forward. Will we continue to track it? Maybe, maybe not. At the end of our 1,000 Hours Outside time frame I will do a post to share everything we learned from those 1,000 hours outside. 😊

Amazon Purchase: I bought these hatching Dino eggs for the kids to give their friends for Valentine's Day and they were a big hit. These would be a fun alternative to candy Easter eggs too!

  1. That is interesting about the amount of protein you need. I recommend Mudhustler.com birdballs which are a ground turkey/ground chicken meatball that you can put buffalo sauce, marinara sauce, or any kind of sauce on. They are really good! I often just use ground turkey and they are also good that way.
    I will be sending positive vibes for the PET scan.
    Also, I am watching Farmer Wants a Wife. It's sweet and heartwarming I think. It's way more innocent than The Bachelor! I watch Pioneer Woman and think I could live like that, but then I think I don't even like to drive that much and she has to drive about 45 minutes to get to a grocery.

  2. Teacher for a day! I love it. I remember when my kids had to write about being principal for a day and all the shenanigans they would allow. You all did an awesome job getting outside this year. I know the sunshine is beneficial for all of you. I had a flashback with the dino eggs...I remember getting those for Hayden's Easter basket when they were in kindergarten. They loved watching the eggs crack open. You continue to be in my prayers...I know the PET scan will show progress!

  4. I will be praying for good results from the scan. That's so interesting about the protein. I'm not sure if you saw on my blog, but I have started listening to Father Mike based on your recommendation. I love it! I was starting to lose motivation with Bible Recap, and he has roped me back in!

  5. Praying for awesome PET scan results!! I think that might be my all time favorite Kristin Hannah book (though it's hard to pick a favorite) but something about those characters and their story just touched my heart. Your meals sound delicious.

  6. I am praying for amazing PET scan results and for good energy to continue as the weather improves. I also look forward to hearing about 1,000 hours outside. I should really get my family to do this one of these years.
