Friday Favorites-- Trader Joe's Edition, the Frozen Section

Today I am linking up with Erika and Andrea for Friday Favorites and I am sharing some of my all time favorite finds from Trader Joe's.. but everything from the FROZEN SECTION. Why from the frozen section? We were so blessed last time we had a baby that several family members/friends/neighbors brought us food and it spoiled us rotten. Then, we ate all the food and realized "oh snap, we actually have to start cooking again??". I am "prepping" in advance for some last minute meals that don't require anything from me except popping it into a microwave. Because when I'm not getting any sleep, making a home cooked meal is NOT how I plan on spending my time. #mustgetsleep #andmaybeashower

Mini Chicken Tacos-- Years ago (like 11 years ago!) I used to be a nanny for a family after school and the family I nannied for always had these in their freezer. The kids loved to come home from school and have a few mini tacos as a snack. Naturally I tried one or two and have been buying these ever since. They are so easy and delicious! Sometimes I will put a little salsa on them, or some taco sauce, or even make some of Trader Joe's fire roasted corn or Mexi corn to eat with them. Easy peasey, delicious and filling. They're an all around win!
Roasted Corn-- Speaking of TJ's Roasted Corn... we love to add this to any Mexican dish we make at home. Every time I make tacos, enchiladas, anything that needs a little kick, we add this. It's great!
Mexican Style Roasted Corn-- We also recently tried this for the first time and are OBSESSED! If your Trader Joe's is like mine though, they're often out of it. They can't seem to keep this stuff on the shelves. The corn mixed with the sauce pods and cotija cheese makes it soooo delicious. Trust me, you need to try it. We also add this to a lot of our Mexican dishes, or we just heat it up as a side with our Mexican food.
Chipotle Vegetable Quesadillas-- I tried these for the first time a few years ago and have been addicted to them ever since! You just pop them in the microwave, and then I finish them in the skillet with a touch of butter to give them a little extra flavor. They're surprisingly filling and healthy, so we always have at least one box in the freezer.
Indian Meals-- I posted about these Indian meals the last time I did a Trader Joe's pst (here if you want to read!) but we just LOVE these! Obviously not everyone is into ethnic foods so this might not be your cup of tea, but if you are wanting to try something different I'd recommend these! My girlfriend who lives in Chicago loves to try different cuisines with her husband all the time and was the first one to tell us about these several years ago. These two are some of our favorites but we also grab the Vegetable Biriyani, Butter Chicken and the Garlic Naan.
Tempura Cauliflower-- I actually didn't buy any this time around because we still had one in the freezer, but these are a delicious way to get some more veggies in!
Cauliflower Gnocchi-- These are another delicious way to get some more veggies in, and they're also super filling. We just heat these up with a little sauce and are good to go!
Thai Sweet Veggie Burgers-- I was so disappointed they were out of these when I was at the store because these are another great quick and easy meal! If you like food that is a teensy bit spicy but not overwhelming, these would be great for you.
Chicken Drummellas-- I've said this before, but Lily Grace is not a fan of meat. We really struggle to get her to eat more protein and luckily she is finally eat chicken nuggets. These are a super quick and easy to make for her. Anyone else's kids not like certain "staple" kid foods? Luckily she loves vegetables, so I know I shouldn't be complaining.
Egg Frittatas-- I saw these on another blog I read a few weeks ago and decided to give them a try, oh my word they are GOOD! The only thing I will say is that they are really salty, so I usually just have one (with a little salsa on top) and then a side of fruit or yogurt.
Sweet Potato Gnocchi-- We just tried these for the first time actually a few weeks ago, but love them!
Shelled Edamame-- Lily Grace LOVES edamame and I love how easy these are since they're already shelled. I just pop them in the microwave with a touch of water and they're done! If Devin and I are eating them too we add a hint of sea salt, but we give them to LG without salt.
Coconut Shrimp-- The only complaint I have about these is that it feels like they take forever to make for something so small. Preheating the oven to 450, then baking for another 10-12 minutes for just a few bites of food. That being said, they are delicious and still super easy (I guess I'm just impatient, especially when hungry!)

Like I said, some of these are favorites we've loved for years, and others are relatively new to us! Either way, you can't go wrong 😉 If you have any suggestions that I should pick up the next time I'm there, PLEASE COMMENT BELOW!!

  1. I just went to Trader Joe’s yesterday (it is an hour and 15 min away) and wish I’d had this post. So many great ones, I have tried a few of these and love the egg frittatas and edamame. Saving this for next time.

  2. Makes me wish there was a Trader Joe's somewhat close to where I live. That Roasted Corn would definitely be in my cart.
