Last week when I was prepping my post about how we prepare for Back to School, I was perusing my Pinterest recipes board and stumbled across some really good recipes that I haven't made in forever. I know I love a good recipe and honestly find Pinterest to be a hard place to find good recipes. Anyone else feel like you find more recipes on Pinterest that look/sound good but actually turn out to be awful? It can't just be me, right?
Anyway, here are some recipes I have actually made and can attest to their delicious-ness! These are all side items, and we usually serve them with salmon/chicken/whatever. I also decided to make all of these again this week to make sure my memory wasn't foggy and they actually were delicious 😉. Several of these were not just delicious to Devin and I, but toddler approved too!
It's kind of hard to consider this a "recipe" because of how simple it is but when I first pinned this I was making it multiple nights a week-- it's so good and so easy! We used tomatoes right off our vine and Trader Joe's sea salt (I'm obsessed!). Not only was this heavenly, but Lily Grace could not get enough of it. Healthy food that our toddler loves makes me feel like a supermom 🙌
America's Test Kitchen Slow Cooker Brussel Sprouts
Dev was in Mexico for a majority of the week, so it took very little to convince me to break out the slow cooker. Oddly enough Lily Grace loves Brussel sprouts so it didn't take a whole lot to convince her to eat this one too. She won't eat protein, but will put away some veggies like there's no tomorrow. I made this and brought it to dinner with my parents and sister and everyone ate it up!
These had me at "goat cheese". I followed the recipe exactly and then drizzled a teensy bit of honey over about half of them to see if I liked it better with honey-- we did! Lily Grace liked the ones with honey drizzled on top better too.
Asparagus and Corn Salad
This one took about 10 minutes to make from start to finish (once your water is boiling) and was SO good. The combination of the vinegar and honey kinda weirded me out and I almost didn't follow that part of the recipe, but I'm SO happy I did! We will be making this one again and again!
Crispy Brussel Sprouts with Bacon and Garlic
Apparently I was on a big Brussel sprouts kick this week. This one had bacon and garlic mixed in... enough said! This was delicious for both the adults and the toddlers. Win/win!
