Baked Potato Bites

I was craving a loaded baked potato the other day but didn't want to eat a whole one, so I decided to make "bite sized loaded baked potatoes". I was all proud of myself until Devin pointed out that they are essentially a smaller, healthier version of "Loaded Potato Skins" that you can get at many sports bars across America. 😂 Hahaha, whoops! So much for being innovative! Regardless, I liked the fact that I could have a smaller and healthier version, that wasn't super greasy. If that sounds like something you'd like too, the recipe is below!
Here's What You'll Need:
3 medium potatoes (we used Yukon golds)

These are all options for your toppings, only make what you'll use!
3 pieces of bacon, cooked and crumbled
1/4 cup freshly grated cheddar cheese
2 tablespoons butter
2 tablespoons sour cream
chives, for garnish
salt and pepper to taste

1. Preheat oven to 400. Bring pot of water to a boil, boiling potatoes for 20 minutes. Drain potatoes and cut ends off. Slice potatoes into rounds.

2.  Spray a lined baking sheet with olive oil spray, and place potatoes on the sheet. Bake for 15 minutes, or until crispy on the outside. Using one fork to hold your potato round still, grab another fork to lightly smash the potatoes. Put a slice of butter on top of each potato and let it melt into your potato. Like this:
3. Top potatoes with whichever toppings you prefer! We are not a big sour cream family, so we opted not to put it on our potato bites. Do what works for you!
