Blueberry Apple Pecan Salad

Good morning friends! I've been on a big salad kick lately to try to balance out the junk food we've been eating. On Monday my body was craving a salad and I looked to the fridge to see what I could whip together. This is what I came up with:

Sorry in advance for the not so technical measurements, I was just kind of making it up as I went!

Here's What You'll Need:
1 large handful of spring mix
1 small handful of arugula
2 tbsp blue cheese crumbles (or goat cheese, whichever you prefer!)
8-10 blueberries
1/4 apple, sliced or chopped
4-5 candied pecans, chopped

Dressing of choice, I used balsamic vinaigrette 

1. First add spring mix and arugula to your plate (you can chill your plate in the freezer for a few minutes first if you want to be fancy šŸ˜€).
2. Sprinkle your choice of cheese on top of the lettuce.
3. Add blueberries, apples and pecans to salad.
4. Top with dressing!

You can make this as a side salad for a bigger meal or make it your main dish by adding a protein. I went back and added some grilled chicken to it to make it a more filling lunch.
