Pinterest Recipe Round Up-- Summer Edition

Good morning friends! Today I wanted to post another Pinterest Recipe Round Up, but a summertime edition. We all know how frustrating it is to find a recipe that looks great but the taste is actually a let down. Here are a few tried and true summer-y recipes I have found on Pinterest, actually made, and would recommend to you. Happy eating everyone! Enjoy!

Cucumber Sandwich Bites- I have made about a dozen variations of this cucumber sandwich recipe, and have loved every single one. They're easy, healthy, and hit the spot! I just look through my fridge and see whatever I have and add it. Hummus, ham and cheese? Perfect. Tzatziki, turkey and tomato? Yum. Smoked salmon with cream cheese? Another big hit. This is the original recipe I followed, but you could easily make your own version.
Zoodles with Creamy Avocado Pesto- We grow zucchini in the summer and every year we feel like we have more than we know what to do with come harvest time. We try to be creative and eat our zucchini in a variety of ways and noodles is one of our favorites! We have made this recipe several times but I would highly recommend adding some grilled chicken strips to it, otherwise you will find yourself hungry again in a an hour or two.
Pioneer Woman Grilled Zucchini- Another zucchini recipe we love is Ree's. Anyone else just absolutely love her?? This one is really so simple it's hard to even count it as a "recipe" and you are almost guaranteed to have everything already in the house!
Garlic and Herb Alouette Stuffed Zucchini Rolls- Okay last zucchini one, I promise! We have made these several times and had the hardest time keeping the rolls from unrolling. We actually skewer several of them onto long skewers now so the ones in the middle at least don't unroll. I can't for the life of me figure out why they unroll so easily for us, but maybe you will have better luck! Either way, the end result is delicious. Sometimes we drizzle a little honey on top too, because why not?
Caprese Grilled Chicken with Balsamic Reduction-- Yum! It's not hard to convince me to eat anything with the name "caprese" attached to it. This one is another win, for sure.
Grilled Mahi with Avocado Corn Salsa- We love fish and try to eat it at least once or twice a week. This avocado corn salsa is really good, but we usually add the juice from a whole lime to it. The original recipe doesn't have that though, so if lime isn't your thing, stick with the original!
