Boursin Garlic & Herb Mashed Potatoes

 Hi there friends! Last week we were talking about our Thanksgiving menus and I shared that we love to add Boursin Garlic & Herb cheese to our mashed potatoes. I decided to whip them up last night and double check the recipe so I could share it with you guys today. If you decide to give this recipe a try, let me know!

Here's What You'll Need:

- 2 pounds of potatoes, chopped with skin on

- 1 block of Boursin Garlic & Herb cheese (5.2 oz)

- 1 cup Half & Half

- 2 tbsp butter

- 1 tbsp dried parsley (or fresh if you have it!)

- salt and pepper to taste


1. Bring a large pot of water to a boil. Add chopped potatoes and cook for 15-20 minutes, or until you can easily pierce the potatoes with a fork. Drain potatoes and return to pot.

2. Add remaining ingredients and mix with a hand mixer. Taste test and add more salt if needed. (I always leave salt to your discretion because some people don't like it as much as others).
