What's Up Wednesday

I know, I know... We all say it every single month... but where did this month go?? I feel like with the weather warming up this month just flew by. Our weather is feeling consistently like spring around here.

Thank. The. Lord. 

Anyway, here's a look at what's been going on around here with us:

What We're Eating This Week: I have been trying to mix up our breakfasts around here a little bit. I usually have a green smoothie or a smoothie bowl, and then either some avocado toast or an English muffin. Don't get me wrong, I still love those and have them a couple times a week, but I'm trying to add some new stuff here and there too. Do any of you like chia seed pudding? I tried it for the first time last week and now it is becoming a regular around here. Even the kids like it! I blend my chia pudding in the morning so it has a smoother texture and it has been making all the difference. Here is the recipe for the one pictured above. It is just as delicious as it looks :) 

I mean doesn't this setup just make your mouth water? I wish I could take credit for it but it's all @earthyandy

What I'm Reminiscing About:  We are back at my favorite beach ever today, Siesta Key, FL and it is reminding me of the last time we were here-- when LG wasn't even 1 yet!

 

I mean look at those curls!! It's so crazy to remember her being this tiny because now she is out here swimming in the pool (almost) independently and jumping over the waves with no fear. This is Liam's and Devin's first time here (Dev was on a work trip last time), but my family has been coming here every spring break since 1984-- isn't that crazy?! I love how much it hasn't changed.

What I'm Loving: This is literally our view when we walk down our condo's walkway each morning. What's not to love?! The gulf coast beaches remind me of Turks and Caicos, but a lot closer. This is a picture my dad took of the sunset last night:


No filters, just a beautiful cotton candy sky. It's going to be pretty difficult to pry me off the beach on our last day here.

What We've Been Up To: I am now officially fully vaccinated-- woohoo!! Dev has had his first shot and will get his second once we get home from the beach. It feels so good to be one step closer to normal life again.

What I'm Dreading: When we return from the beach LG has to get COVID tested in order to go back to school. She has been tested before due to an exposure and she actually handled it pretty well, but I'm still not looking forward to it.

What I'm Excited About: SPRING IS HERE!!! Spring is my favorite season and I am so so excited for it. The weather is warming up and all the fun outdoor activities will be starting again soon. Who knows, maybe we will even get to go to a baseball game this year? Our local team, the Charlotte Knights, have started letting fans come in at limited capacity. I love baseball and grew up going to Cincinnati Reds games with my family. I am really hoping we are able to get to a game this summer!

What I'm Watching/Reading: I just published my book post for February and March on Monday-- I read some great books the past two months! These are the books I read:

As for watching, we are on season 3 of The Man in the High Castle on Amazon and it is getting intense!!!

What I'm Listening To: When the weather starts to warm up outside I transition to country music. Country music just makes me think of being outside, whether on a boat on the lake or just hanging in the backyard. There's just something about it that makes me feel happy. I usually just tell our Google Home to play "today's top country". Google Home does a good job of picking just the right songs.

What I'm Wearing: A couple weeks ago I posted some of the swimsuits and coverups I grabbed for the beach. You can read the whole post here, but here are a few of my favorites:

I originally saw this swimsuit as an ad on Instagram for $100, but then Amazon recommended it to me... for less than $35! I was sold!

I loved the color of this sarong (I got cyan), and how easy it was to tie on. I could tie it around my waist if I only wanted to cover the bottom half, or tie up by my chest if I wanted to cover up higher.

I LOVED this hat! It has enough coverage and also has a strap I can tighten under my chin so it doesn't fly away in the wind. Isn't that always the worst part of a floppy hat? I also really liked this coverup. It is longer in the back than it is in the front, which is an added bonus. So often in the summer we are on our way home from the pool and I need to run into the grocery store real quick.. I feel like this is a coverup that covers enough if I have to run a post-pool errand real quick.

What I'm Looking Forward to Next Month: Devin's birthday!! He hasn't quite figured out what he wants to do to celebrate yet, but I'm thinking it'll probably be a little friends get together somewhere outside, like a brewery or something. Easy, chill, and safe!

  5. We go to SK often for summer vacay. Trav's aunt has a house there which is so nice and close to the beach (and it has a pool) It really is the best beach ever and who doesn't love the daiquiri deck?! ;) I love that black amazon swimsuit; i will have to check it out. I am excited for spring time as well.
