What's Up Wednesday

 Woohoo-- it is the first What's Up Wednesday of summer! We are already over here trying to live our best summertime lives. We have been enjoying some popsicles and water activities outside, have been to the library to grab some new books to read, and are getting geared up for summer camp when it starts next week. Let's see what else we've been up to:


What We've Been Eating: We are still trying to incorporate as many fresh foods into our diet as possible instead of processed. I wrote about this last month but it has honestly blown my mind how much more energy I have on the days I am only putting natural, nourishing foods into my body. I used to feel sluggish and tired in the afternoons when I put the kids down for their naps, but by having a healthier, more nourishing lunch I actually have a lot more energy. This seems like common sense, but unfortunately a lot of things that are marketed as "healthy" actually aren't. Anyway, off my soapbox! These Thai Summer Rolls have been a big hit around here because it has been so dang hot. They are cool, crunchy, and refreshing. Perfect!

What I'm Reminiscing About: Our sweet girl is off to camp next week, which is bringing back memories of her first camp experience. 

In 2019 she went to Princess Ballerina camp at the summer camp I used to work at in college. She loved it! I know she is going to have a great time at gymnastics camp next week, and then Princess Ballerina camp again in July. 

What I'm Loving: Not having a schedule!! We are officially on summer break and it has been nice to wake up and not have anywhere to be. Obviously that changes next week with camp, but it has been nice to have a week with no schedules. 

What We've Been Up To: We have been doing a lot of hiking/exploring in nature:

Basically just staying active! Wearing the kids out before nap time 😉

What I'm Dreading: Honestly, nothing. Life is good. Thank God!

What I'm Working On: The never ending list of things to do around the house. I swear we check something off our list and two new things pop up that need to be done. Anyone else?? I'm over it. I told Devin I almost miss the days of being newlyweds and living in our teeny tiny studio apartment together. That apartment could be completely cleaned from top to bottom in under an hour and the yard/building maintenance was done by other people. We had so much more time on our hands!!! Ahh, the grass is always greener on the other side, right?

What I'm Excited About: Hilton Head!!! We leave for our annual Hilton Head trip in 17 days and I cannot wait. Here are a few pictures of our trip from last year:


What I'm Watching/Reading: I am finishing Isaac's Storm right now, which is about the Galveston hurricane. It is fascinating!! I was talking about it to Devin and he was so intrigued he started reading it too. We have two bookmarks in the same book 😂 If you are a history buff, add Isaac's Storm to your list. 

A friend recommended The Lost Pirate Kingdom on Netflix and at first I thought "there's no way I will like that". Apparently I was wrong! I had zero interest in pirates beforehand but found this show to be fascinating. 


Now we are making our way through some of the Pirates of the Caribbean movies because I'm hooked. 

True story: one time when we were in Hawaii they were filming one of the Pirates of the Caribbean movies off the coast where our hotel was. There were two pirate ships way out in the water having a battle and a helicopter flying overhead filming the whole thing. It was SO cool!!! Then as they were sailing the ships back into the harbor the cast must've seen the hundreds of tourists/spectators who were all lining the beaches to watch and when they got close enough all of the pirates gave one loud collective "ARGHHHH!" and waved at us. It was great! Unfortunately this was years ago and while I technically had a "camera phone" there was no way to get a decent picture of it with what I had. 

What I'm Listening To: A little Sheryl Crow, Jimmy Buffet, Zac Brown Band, Luke Bryan, Jack Johnson, Vance Joy, Ben Rector.. kind of all over the place! Depends on what kind of mood I'm in I guess. One thing all these artists have in common is they are all happy/upbeat. My kind of music 😊

What I'm Wearing: I've started buying clothes again! I hadn't had a reason to over the past year since we weren't going anywhere, but now that has changed. Basically I've been living in the same jean shorts, with some v neck t shirts and the occasional something different:

What I'm Doing This Weekend: It's Memorial Day Weekend! We have plans to hang out with friends one night, a brunch at our house Monday, and then just a lot of family time in between. A good mix of friends, family, and relaxation.

What I'm Looking Forward to Next Month: Gymnastics camp, our beach trip, and my birthday! June is going to be a great month.

  3. I'm definitely going to try those Thai wraps because they sound good and I need cold lunches at work since our microwaves are off limits. And we went to Hilton Head Island once and would LOVE to go back sometime. Enjoy your vacation!
