Life Lately Part 1

 Good morning friends and happy Monday! My teacher friends in the public school system start back today (kids next week) and my friends in the Catholic schools have the kids' first day on Wednesday. One of the teachers at my old school is taking her child to college, so I get to sub on Thursday. It's going to be a busy but exciting week! 


I realized it's been awhile since I've done a "Life Lately" post and I have what feels like a million pictures to unload here and share with you. I am going to split this post into a "Life Lately Part 1" and "Life Lately Part 2" since there are too many pictures. Starting with...

LG and I were lucky enough to grab tickets to see Beauty and the Beast Live at a small local theater. 

This theater (McGlohan) is an old church that was renovated for shows and one of the mega churches in Charlotte (Elevation Church) used to use it for services. I think it is so cool that they left the stained glass windows.

Afterwards we grabbed an Acai bowl to split, which started Lily Grace on a big Acai bowl kick. She wants them for breakfast almost every day now. 

One week our big girl had gymnastics camp, so Liam and I got to spend a lot of one-on-one time. We went to the playground by our house with all the trucks. This boy could play with these trucks out here for hours.

Then one day he requested to "see Kim" (one of the childcare workers at the YMCA), so I took him there. Clearly he hates it. 😉

Meanwhile at camp they built and decorated a castle out of cardboard boxes. I thought this was such a cute idea and Lord knows we have a lot of cardboard boxes 😂 maybe one day we will build our own mini castle or something similar. 

Prior to COVID, I used to love running inside. I loved the air conditioning, I loved proximity to water fountains and bathrooms. But now, I very much prefer running outside. An added bonus to this are the little "friends" I stumble across while out for a run... like this guy:

Speaking of exercise, our big girl is really into yoga lately and it makes me so happy. We have some kid yoga books and she unrolls her mat and does the poses. Here she is wearing a mermaid costume while simultaneously doing yoga... because why not? 😂


And then our other big thing we've been into lately has been our garden! Check out our mini watermelon!

Devin has also been growing a lot of peppers. This one here is a poblano, but he has several other hot chili peppers too. 
He and a friend are growing different kinds, so they pick their peppers and split their harvests. That way we don't have a dozen jalapeños, and he doesn't have a dozen tiny red ones (I forget what they're called). 

We have been using the peppers to add to our plant-based nachos..

Plant-based nacho cheese might be my all time favorite plant-based recipe. We put it on nachos, quesadillas, tacos, as a dip, etc. This is our favorite recipe for it:

  5. You guys should do cosmic yoga on YouTube. Emilia loves it! We do it before bedtime sometimes to get our wiggles out! Looks like ya'll have been having some fun!

  7. The theater is so pretty! I love that LG dressed according to theme :) We haven’t had much luck with our garden. Lots of tomatoes and the occasional cucumber.
