Hello there friends! It's been awhile since I've added a recipe to the blog, and I figured I needed to get back into it. It's not like I've stopped cooking-- I've just stopped taking pictures of the food. Time to remedy that. 😉 Today I am getting back into the swing of things with a recipe the kids loved so much they asked me to make it again the following night. You'll see no complaints from me!
Here's What You'll Need:
- 1 pound of carrots
- 1 medium lemon
- olive oil
- salt and pepper
1. Peel, trim, and halve carrots. Cut into matchsticks. Drizzle with olive oil, and toss with salt and pepper.
2. Put into air fryer basket at 400 degrees for 12-15 minutes, stopping to shake basket halfway through. Carrots are done when they are lightly browned.
3. While carrots are cooking, zest your lemon and then cut it into wedges.
4. Once carrots are done cooking, pour them back into a bowl and toss with lemon zest and the juice from 1-2 lemon wedges.
