Citrus Beet & Mozzarella Salad

I am so excited to share one of my new favorite salads with you today. Several weeks ago Devin and I went out to eat at a new restaurant here in Charlotte and I ordered a "beet and burrata" salad. The description made it sound similar to a Caprese salad but with beets and burrata rather than tomatoes and mozzarella. I was really looking forward to it, and then they brought it out to the table. 😐 It was not at all like I expected it to be, it was an actual salad (with spring mix), and one or two bites of beets and burrata. So Devin and I said to each other "okay then, let's just make it OUR way at home this week". Thus, this recipe was born. 😃

Here's What You'll Need:
2 teaspoons red wine vinegar
1/2 teaspoon dijon mustard
2 teaspoons orange juice
Salt and pepper, to taste
1 navel orange, peeled and sliced
1 ball of mozzarella (the kind in the water), cubed
2 large beets, steamed, peeled and cubed (or I just buy these from Costco and use one of the sealed packages inside)

1. Combine first 4 ingredients in a small bowl and mix. 
2. Combine last 3 ingredients in a large bowl and gently toss (you don't want the beet juice to stain everything red).
3. Drizzle vinaigrette dressing over the mozzarella, orange slices and beets. 
4. Chill for 20 minutes.

  1. ooh, I am intrigued. Beets are so tasty and way easier to make than I used to think (aside from the red stains on my hands). I will try this out soon.

    1. I wear kitchen gloves! We usually keep them on hand for chopping jalapeños or other spicy foods, but I use them for chopping my beets too.
