Hi there! Today is a random recipe we came up with last week when we were having a "shoot, there's not much left in the fridge, what can we make?!" moment. Sometimes those kinda recipes don't work out at all, but sometimes they turn out to be great! This was one of the ones that ended up being delicious and we will gladly make again. Since you are deseeding the jalapeños, they shouldn't be too spicy. That being said, we didn't give the jalapeños to the kids.. we kept those for ourselves 😀
Here's What You'll Need:
- About 20 or so mini sweet peppers, the tops cut off and peppers deseeded (we buy ours from Costco)
- a couple jalapeno peppers, the tops cut off and pepper deseeded
- 2 tablespoons freshly grated parmesan
- 1 tablespoon olive oil
- 1 tablespoon oregano
- salt and pepper to taste
1. Preheat oven to 400 degrees, line a baking sheet with aluminum foil.
2. In a large bowl, toss peppers with olive oil, oregano, salt and pepper.
3. Pour the peppers out onto the baking sheet and top with parmesan cheese.
4. Pop into the oven for 20 minutes, but for the last 3-4 minutes or so, switch the oven over to "broil". This will brown the tops a little.
