My Favorite Breakfast-- With a Twist

 Good morning friends! About a year and a half ago I shared with you my favorite healthy breakfast idea. I still eat this breakfast probably 1-2 times a week, but mix it up a bit to keep it from getting boring. Here's one of the ways I like to change it:

Here's What You'll Need:

- 1 small handful arugula

- 1 avocado, mashed

- 2 pieces bread

- 2 eggs

- 1 teaspoon white vinegar


1. Heat a small pot of water to boiling. Add vinegar to pot of water. 

2. While waiting on water to boil, pop your two pieces of bread in the toaster and toast to desired doneness. Once toast is done, add mashed avocado to toast. Top with arugula leaves. 

3. Crack one of your eggs into a small bowl, leaving the other egg waiting to the side. Once water and vinegar are boiling, give it a quick stir with a fork to make a whirlpool. Pour cracked egg into the whirlpool to keep the whites from spreading out. Crack other egg into the small bowl and pour the egg into another side of the pot. Cook eggs for 3 minutes. 

4. Using a slotted spoon, scoop eggs out and onto avocado/arugula toast. 

5. Top with salt and pepper and enjoy!
