Good morning friends! I shared this breakfast recipe on Instagram last week and several of you were asking for the recipe, so here it is! Seriously I cannot tell you enough how much it means to me when you all ask for the recipes. It makes me so happy to know that somebody out there is actually reading this stuff!! This is one of our current favorites around here. Not joking I have made this 4 times over the past two weeks and the whole family loves it-- every single time!
Here's What You'll Need:
- 2 large sweet potatoes, sliced
- 4 mini sweet bell peppers, seeds removed and sliced
- 3 green onions, sliced
- 1 tablespoon minced garlic (about 3-4 cloves)
- 1/2 cup shredded white cheddar cheese
- 4 cups shredded kale
- 4 eggs (or really one per person, if only 3 people are having this, make 3!)
- EVOO
- salt and pepper
- 1/2 tablespoon smoked paprika
- 2 dashes cayenne (optional)
1. Preheat oven to 400 degrees. In a large oven safe skillet (we use our cast iron), heat olive oil over medium high heat. Add sliced sweet potatoes and sprinkle with salt and pepper. Stir occasionally and cook until slightly browned, only about 4-5 minutes. These will continue to cook, so don't worry if they aren't perfectly browned yet.
2. Add sliced peppers, green onions and garlic. Stir to combine and cook 3-4 minutes.
3. Add shredded kale and stir, cooking until wilted.
4. Using your spoon, make a little hole in your hash for each of your eggs to cook in. Crack eggs into their holes, and cover the whole thing with your shredded cheese. Pop into the oven and bake for 10 minutes.

This looks so good, and I'm always looking for kale ideas. I like it but find it hard to eat raw, so this looks perfect.
