Yesterday I was taking pictures for a Day in the Life of Us post I'm planning to put out on Friday and I made a breakfast I have been making a lot around here lately: Papaya Boats
They are such an easy breakfast to make and are a good way to get some fruit and protein in and feel like you're mixing it up a bit.
Here's What You'll Need:
- 1/2 papaya, cut lengthwise (I just save the other half to make the same breakfast the following day)
- 3/4 cup vanilla Greek yogurt
- 1/2 cup frozen mango (a tropical blend works too)
- 2 tablespoons granola or muesli
- honey to drizzle
1. Once you have your papaya cut lengthwise, scoop out the seeds and stringy pulp.
2. Heat frozen fruit in a microwaveable bowl until it is still chilly but not frozen (usually about a minute). Leaving the juices still in there, add vanilla Greek yogurt and stir to combine.
3. Spoon fruit/yogurt mixture into the cavity of the papaya. Top with granola and drizzle a little honey on top.
