Lemon and Arugula Salad

 Good morning friends! I am FINALLY back with another recipe. I took a little time off from blogging my own recipes but am feeling motivated to get back into it. I have several healthy recipes coming your way over the next few weeks. Starting with today's lunch: lemon and arugula salad!

Here's What You'll Need:

- 1 handful of arugula

- 1/2 an apple, peeled and sliced

- 1/4 cup shaved parmeson

- 2 tablespoons candied walnuts (pecans work too!)

- juice of 1 lemon

- 1 tbsp olive oil

- 1 tbsp balsamic glaze

- salt and pepper

1. Start by plating your arugula. Put apple slices, parmesan, and walnuts on top. 

2. In a small bowl whisk together the lemon juice, olive oil, salt and pepper. This is my all time favorite salad dressing! Drizzle on top of the salad. 

3. Drizzle the balsamic glaze on top. 

All done-- time to enjoy!
