Good morning and happy What's Up Wednesday! Is anyone else really sad that June is coming to an end? I LOVE summer. I love spending our days by the pool, going to the beach, and playing outside for countless hours. I love the extra hours of sunlight and watching the kids chase lightning bugs. How is this summer flying by so quickly? Time needs to slow down!

What We're Eating: If you read my post on Monday you know Devin and I are going to be officially plant-based for the month of July... so we have a line up of some of our favorite plant-based meals for the end of the week... but are trying to use up all the meat in our freezer before July begins. So the beginning half of this week is:
- salmon
- steak
- chicken
then the second half of the week is:
- stir fry with crispy tofu
- tacos with black beans, avocados and salsa
- spaghetti (meatballs for the kids.. no meatballs for the adults!)
We are excited to give this a go and can't wait to see if it makes a noticeable difference in how we feel!
What I'm Reminiscing About: Last summer and having Devin around all the time. While 2020 obviously had many negatives, I actually do miss some parts of it. Especially Devin working from home. I miss that he used to be able to have lunch with us every day or some days he would do emails/work super early in the morning or late at night so we could spend a couple hours at the pool together as a family. I keep telling him he needs to suggest he work from home more often in the summer 😉
What I'm Loving: Spending our days at the pool! We belong to the YMCA of Greater Charlotte and with our membership we get access to all the branches.. meaning all the pools! We switch it up and go to several of the different pools and play in their waterparks and ride their water slides. The kids love it, they come home worn out, and take great naps (one of them is more consistent than the other with nap time).
What We've Been Up To: We just got back from our annual Hilton Head trip. You can read my recap posts here:
It was a wonderful trip, but let's just say that taking two young kids to the beach isn't exactly relaxing. I felt like I needed a vacation after the vacation. 😉. That being said we had a great time, the kids had a blast, and we can't wait for our next trip!
What I'm Working On: I am running the Cooper River Bridge Run in Charleston in September and the Charlotte Half Marathon in November so I am getting back into my running routine. It always feels good to take some time off running and try other forms of exercise, but it also feels so good to get back into running.
What I'm Excited About: We are heading to my older sister's house in Georgia this weekend for the 4th! I am excited to spend more time with family and let the cousins play together.
What I'm Watching/Reading: We are way behind on this but Devin and I started watching The Crown and love it. I am honestly surprised by how much Devin loves it because he's more of a Game of Thrones/Breaking Bad kinda guy, but he is just as fascinated as I am. We are working our way through season 2 now.
As for reading, I am finishing up Anxious People and love it! It has such a fun, quirky, lovable group of characters. I love the author Fredrik Backman too. He can make you laugh out loud and want to cry all in the same chapter.
What I'm Listening To: I have been on a big Sheryl Crow kick lately and tell our Google Home to play her music. I usually get a good mix of Sheryl Crow and some other country/rock songs.
What I'm Wearing: Most days I look like this:

But then I've also had a couple days where I dressed up a bit too:What I'm Doing This Weekend: We are going to Georgia to celebrate the 4th with family. Can't wait!
What I'm Looking Forward to Next Month: More pool time, more paddle board time, and hopefully a trip to Wilmington to visit Devin's family!

Those tacos look so good & all of your outfits are so cute! I don't want to give meat up completely but I've definitely been considering being MORE plant based.
ReplyDeleteThat's what we did for awhile too! I noticed the more often I ate plant based meals the better I felt.. which is why we are giving it a shot to go all in. Hopefully it's easier than we think and we can do it long term!

ReplyDeleteOur pediatrician used to say taking young kids is a trip not a vacation 😂which we found to be true. I LOVE the Crown. I was late to the Crown game too but 2020 gave me time to binge it. I love all your summer outfits!
ReplyDeleteOh, we have great memories of our week in Hilton Head but that was almost eight years ago so we definitely need to plan another trip there! I love that gingham dress! It's so fun! And that is so neat that your pool membership allows you to get to a bunch of different pools. I'd love that!
