Good morning! This year one of my New Year's Resolutions was to blog one healthy recipe a week. I try to cook healthy meals about 80% of the time around here and often whip up something delicious but never remember to write down what it was. My hope is that through blogging these recipes I will have a little online collection of some of the delicious healthy recipes we've been eating that'll be easy to flip back to when I'm having one of those "what on Earth am I going to make for dinner?!" moments.
Let's get to the first healthy recipe of 2020!
Lemon Parmesan Brussel Sprouts
What you need:
1 bag of Brussel sprouts
1 lemon
1 tbsp garlic
1/4 cup shredded Parmesan cheese
1. Wash and cut your Brussel sprouts in half. Heat a little olive oil over medium-high heat in a skillet. Add garlic and Brussel sprouts and sauté until browned and crispy, about 10-12 minutes. Add a little salt and pepper.
2. Meanwhile, zest your lemon and set aside zest. Juice lemon and reserve 2 tbsp for recipe, discard rest (or pour in a glass with some water to drink!).
3. Once Brussel sprouts are finished cooking, put them on whatever plate/serving dish you plan to use. Drizzle lemon juice on top, sprinkle lemon zest on top, and sprinkle parmesan cheese on top.
Done! Easy peasy and healthy. A win/win 😉
