Kale and Arugula Salad with Pine Nuts

 Good morning friends! Here is another super healthy salad we whipped up one day this week. I used to be that girl who only liked salads if they were doused in Ranch dressing, but I have learned to love a simple lemon-olive oil dressing. This is so much healthier for you, so I'm hoping this new taste preference sticks!

Here's What You'll Need:

- 1 large handful kale

- 1 large handful arugula

- 1/4 small red onion, very thinly sliced

- 1/2 cup feta cheese

- 1/3 cup pine nuts

- 1/3 cup pumpkin seeds, or sunflower seeds

- juice of 2 lemons

- 3 tablespoons olive oil

- salt and pepper, to taste

1. Combine first 6 ingredients in a large bowl and mix together. 

2. In a smaller bowl, combine lemon juice, olive oil and a hint of salt and pepper. Stir to make dressing.

3. Pour dressing onto salad and toss to combine. 

4. Serve and enjoy! 

We usually make this as a side salad for dinner, but you could also throw your protein on top and make this salad your dinner!
