Roasted Broccoli & Cauliflower with Lemon and Pine Nuts

Good morning friends! I have been on a big veggie kick lately, trying to get in as many various vitamins and nutrients that I can. One of our favorite veggies around here is broccoli. Both of my kiddos eat broccoli without complaint every time, so it's a staple around here! I am always looking for some new ways to mix it up and keep it interesting and this is a new way I tried over the weekend. I hope you enjoy!

Here's What You'll Need:

- 3 cups broccoli and cauliflower florets

- zest of 1 lemon

- juice of one lemon

- 1/4 cup pine nuts

- 1 teaspoon dried oregano

- 1/4 cup shredded parmesan cheese

- Olive oil

- Salt and pepper to taste

1. Preheat oven to 425. Line a baking sheet with parchment paper.

2. In a large bowl, combine first 5 ingredients (save the parmesan cheese for the end!!). Drizzle with olive oil and sprinkle with salt & pepper. Stir thoroughly to mix. 

3. Spread on lined baking sheet to make a thin layer. Pop into the oven for 20 minutes.

4. When veggies are done roasting, plate them and sprinkle parmesan cheese on top.
