Quick and Easy Peppermint Bark

Hi There! Earlier this week I posted about a typical day in our lives and one of the things we did was make peppermint bark for family and friends. This recipe is super easy and quick to make, so I thought I'd share in case any of you were interested.


You will need:
4 cups of white chocolate chips
2 cups semi-sweet chocolate chips
1/2 teaspoon peppermint extract
4 candy canes crushed in a Ziploc bag

Directions:
1. Melt white chocolate chips in microwave safe bowl. I do this in 30 second intervals and stir in between each round. 
2. Once white chocolate chips have melted and been stirred, pop your semi-sweet chocolate chips in the microwave and melt them at 30 second intervals, stirring between each round. 
3. While your semi-sweet chips are in the microwave, add 1/2 teaspoon of peppermint extract to melted white chocolate chips. Stir thoroughly. 
4. Line a baking sheet with parchment paper and pour white chocolate/peppermint extract mixture onto the parchment paper, spreading it thin.
5. Once the semi-sweet chocolate chips have completely melted, add dollops of semi-sweet chocolate on top of the white chocolate. Use a knife to swirl and mix the white chocolate and semi-sweet chocolate.
6. Sprinkle your crushed candy canes over your chocolate and lightly press down on them to make sure they are stuck in the chocolate. 
7. Pop your peppermint bark in the fridge overnight (probably not necessary to do it that long if you're in a rush) to cool. Then using your hands, break the bark apart into pieces. Add to little goodie bags and you're done!

How simple is that? I can make an entire batch in less than 10 minutes and then be on my way to doing more important things. Hope you enjoy this!
