What's Up Wednesday

Good morning and happy What's Up Wednesday! This week is my last full week of school and while I am super excited to have the summer off to spend with family, it is a little bittersweet because I genuinely love teaching so much. I will miss those kiddos over the next two months! We are going to be so busy traveling this summer though that I'm not sure I'll have too much time to think about it :)


Let's get started!

1. What We're Eating: We are grilling out as often as possible this week, which means lots of burgers, hot dogs, salmon, chicken, pineapple, corn on the cob, and pretty much anything else you can grill! Last Friday I was telling you all about my obsession with this pineapple peeler, and I'm telling you... it is a total game changer. We are eating pineapple around here a lot more often because of it! I even brought it to school to show the students in garden club because we planted a pineapple in the school garden. They thought it was equally as cool as I did 😂 My sister made the most delicious aioli sauce to put on our salmon the other night and we have recently become addicted to that too... I'll try to blog the recipe in the next few weeks to share it!
2. What I'm Reminiscing About: We are gearing up for another big road trip to Jacksonville, FL this weekend for a wedding and it is making me think of our last trip there in January. LG looks so little to me in these pictures! I have everything prepped as this is the first of many trips we have planned this summer. 3. What I'm Loving: After months of going back and forth between "should I or shouldn't I" on essential oils and a diffuser, I finally decided to just go for it. Part of me wasn't really convinced that they "do" anything.. and I'm still not 100% convinced. What I do know? They make my house smell amazing and are safer than lighting a candle (I'm always afraid I'll forget to blow it out!). I have ours plugged in next to our bed which is where I usually sit while I blog/read in the afternoons and I love turning it on and let it make my entire room smell like eucalyptus oil or lavender (my two faves so far). It smells SO GOOD! I also turn it on at night before bed and put lavender oil in it. I can't say for sure that it makes me sleep better, but I enjoy the smell and I definitely think it's calming so I'm sticking with it! This is the diffuser I ended up going with (can you ever go wrong with "Amazon's Choice"?) and these oils (again, Amazon's Choice for the win).

4. What We've Been Up To: We were lucky enough to spend this past weekend in Blowing Rock, NC with my parents and it was INCREDIBLE. 
I didn't realize how badly we needed a weekend of relaxation away from home until we went. I don't know about you, but we always find ourselves SO busy in the spring. We have Dev and Lil's birthdays, Mother's Day, Easter, and several other things going on not to mention getting our yard prepped and ready for summer. It feels like there is always something to do when we are at home, so having the opportunity to get away from it and spend time as a family for a few days was a dream come true!
One morning LG woke up super early (life with a toddler!) so rather than risk waking up everyone else in the house we decided to grab a cup of coffee to go and watch the sunrise on the Blue Ridge Parkway. It was absolutely breathtaking and while these pictures are beautiful, they do not do it justice AT ALL!
Both this picture and the one above were taken at Moses H. Cone Manor right off the parkway. There is a little park with a lake down below there which is where we have done a lot of training for our marathons/half marathons. The trails at this park are beautiful!
5. What I'm Dreading: I'm not sure if "dreading" is the right word here, I'm more "nervous" about our trip to Colorado in June. We have taken LG on a plane before, but she was 9 months old at the time and pretty much slept the whole flight. Now, traveling with a 2 year old on a 3 hour flight is making me a little nervous. That flight followed by the 3 hour car ride to our final destination might be enough to do us all in. I have prepared for it as much as I can, but let's just say we will be crossing our fingers and saying some prayers that we all survive the trip!
6. What I'm Working On: I am working on starting up my own blogger link-up  beginning in June called "Weekend Highlights". I love sharing our weekend highlights with you all on the blog but would love to read about what YOU are doing over your weekends too! The first Weekend Highlight Link Up is scheduled for Monday, June 10th, please come back and link up!! 7. What I'm Excited About: I am 24 weeks into this pregnancy and am still LOVING every second of it. We are still tossing around some baby girl names because we haven't settled on one quite yet... our boy name was much easier to pick! I have been asking my students to give us name suggestions and some of their suggestions are cute/funny. Rapunzel, anyone?
8. What I'm Watching/Reading: I am still working my way through Game of Thrones and just finished season 5. I have to say, season 5 has been my favorite so far! I have been reading like crazy too and will have my book review to share with you sometime next week. The book I'm currently finishing up is A Woman of No Importance: The Untold Story of the American Spy Who Helped Win WW2. It is about a female American spy who is able to help with the French Resistance during WW2. The Germans initially do not expect women to be working as spies so she is able to get away with some incredible things unnoticed before they finally start catching on. If you love WW2 books, I'd highly recommend this one. 
9. What I'm Listening To: Pretty much every Disney soundtrack ever made. Lily Grace is really into some Disney songs right now and I can't complain. It beats "Baa Baa Black Sheep" for the thousandth time!

10. What I'm Wearing: I did a whole post about the Nordstrom stuff I purchased recently but here are a few snapshots from that post. 
I am trying to make the non-maternity outfits last as long as I can and I am loving wearing the belly bands over my regular pants/shorts.

11. What I'm Doing This Weekend: This weekend we are headed to Jacksonville, FL for a family wedding and I CANNOT wait! I ordered a couple dresses online from Amazon and I'm nervous because they haven't come in yet.. and we leave tomorrow! Yikes! I hope they are as good as the reviews said they were, and I hope they get here on time!
12. What I'm Looking Forward to Next Month: Relaxation and family time in Colorado. We are also having some close friends come into town to visit towards the end of the month and it'll be so good to see them again.
13. What Else is New: Whew, that felt like a lot of info packed into one post! I think that's it!

  2. That sounds like a great book! I just read The Alice Network (about a group of women spies during WWI) and have begun reading The Huntress (a book about women during WWII). I have that pineapple peeler and no joke we are eating 2-4 pineapples a week now! (I have three teenage boys and they can really devour fruit fast).

    1. The Alice Network is on my list!! I'll have to add The Huntress too! I've never been so obsessed with a kitchen tool as I am with this dang pineapple peeler 😂
