Asparagus with Lemon and Parmesan

Good morning! I know Wednesday isn't my usual recipe day, but I had intended to take pictures for "A Day in the Life" yesterday and then completely forgot until it was almost lunch.. oops! So today I'm trying again with the pictures and swapping my Thursday recipe post with today.

Today we are having asparagus with lemon and parmesan. Here's what you'll need:

- 1 bunch asparagus, woody ends trimmed off.
- the rind from half a lemon, sliced into strips
- juice of one lemon wedge (roughly 1/4 of a lemon)
- 2 tablespoons olive oil
- salt and pepper 
- 2-3 tablespoons freshly grated parmesan (add whatever amount is to your liking)

1. Heat olive oil over medium-high heat in a large skillet. Add asparagus and sprinkle with salt and pepper. Stir and sauté until lightly browned, about 10-12 minutes.

2. Add strips of lemon zest and cook another 1-2 minutes. Add lemon juice and stir to coat asparagus. Remove from heat and add to serving dish.

3. Sprinkle with freshly grated parmesan. I used roughly 2-3 tablespoons but if you like more, go for it!
