Since being given the "shelter in place" order, we have been doing nothing but stuffing our faces with food. We aren't used to being home all the time and the temptation to eat is always around us! I've been trying to counteract our unhealthy snacks by eating more salads for lunch and dinner. This one we made last week and it was a big hit! Here's hoping you enjoy it as much as we did 😀
Here's What You'll Need:
2 cups romaine lettuce, chopped
2 cups spring mix
1/4 cup pomegranate tendrils
2 ripe pears, sliced
1/2 cup of goat cheese
1/4 cup toasted candied pecans (I buy them pre-made, but if making your own is your thing, have at it!)
Dressing of your choice (we used Panera's Poppyseed dressing, found in the refrigerated salad dressing section of the grocery store)
1. Combine both lettuces in a large bowl and mix. Layer half the lettuce in the bottom of your serving dish (I used a trifle bowl so you could see the pretty colors/layers of this salad).
2. Layer half of your pears on top of the lettuce. Sprinkle half the goat cheese, pomegranates, and candied pecans.
3. Repeat steps 1-2. Top with dressing of your choice. Enjoy!!
Thanks for the recipe! I'm trying to keep my diet as healthy as possible during the confinement. Pecans and pomegranate are comfort food for me so this recipe is perfect :)
