Berry Goat Cheese Salad with Balsamic Glaze

Good morning! Here is another salad I whipped up for lunch this week that could easily be a side salad (without protein) or a main dish (with protein).



Here's What You'll Need:
2 large handfuls spinach
2 large handfuls spring mix
1 cup strawberries, chopped
1 cup blueberries
1/2 cup goat cheese
1/4 cup sunflower seeds or pumpkin seeds (optional)

For Balsamic Glaze:
1 cup balsamic vinegar
1/2 tbsp honey

1. Make balsamic glaze first because it needs to cool (you could even make this the night before if you have time). Combine balsamic vinegar and honey in small saucepan and bring to a boil. Reduce heat and let simmer for 15 minutes, stirring occasionally. Remove from heat and pour into a glass jar. Allow it to cool for a 3-4 minutes and then put in the refrigerator.

2. While the glaze is cooking, combine spinach and spring mix in a large bowl. Toss to combine. Top with strawberries, blueberries and goat cheese. Top with sunflower seeds or pumpkin seeds (if desired).

3. Once balsamic glaze has cooled down, drizzle a little over the top of each serving. Reserve extra for future salads 😀
